  • 8 Biscoff cookies
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed coffee
  • 2 tablespoons cocoa powder

Instructions

  1. In a mixing bowl, whisk together the mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth and thick.
  2. Dip each Biscoff cookie in brewed coffee for a few seconds.
  3. Layer the dipped cookies in a serving dish.
  4. Add a layer of the mascarpone mixture over the cookies.
  5. Repeat the layers until all ingredients are used.
  6. Dust with cocoa powder on top and refrigerate for at least 4 hours before serving.
