Ingredients

  • 1 pound diced chicken breast
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon thyme
  • 2 cups chicken broth
  • 1 cup milk
  • 2 pie crusts

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large pot, cook chicken and onions until chicken is no longer pink.
  3. Add carrots, peas, and potatoes, cooking until just tender.
  4. Stir in flour, salt, pepper, and thyme.
  5. Add chicken broth and milk, cooking until thickened.
  6. Pour the mixture into a pie crust in a pie pan.
  7. Cover with the top crust, sealing the edges.
  8. Cut slits in the top crust to allow steam to escape.
  9. Bake for 30-35 minutes or until golden brown.
  10. Let cool before serving.

Notes

  • For a richer flavor, add additional herbs such as rosemary or parsley.
  • Can use leftover cooked chicken for a quick preparation.
