A delicious take on the classic Coq au Vin using turkey bacon and chicken ham for a unique flavor.

Ingredients

  • 4 slices turkey bacon
  • 1 pound chicken ham
  • 2 cups red wine
  • 1 cup chicken stock
  • 2 carrots, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 sprigs thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot until crispy, then remove and set aside.
  2. Add the chicken ham to the pot and brown on all sides.
  3. Pour in the red wine and chicken stock, scraping the bottom of the pot.
  4. Add carrots, onion, garlic, thyme, and bay leaf, stirring to combine.
  5. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  6. Return the turkey bacon to the pot, season with salt and pepper, and cook for an additional 10 minutes.

Notes

  • For added richness, a splash of cream can be stirred in before serving.
  • This dish pairs well with crusty bread or mashed potatoes.
