Delicious and fluffy cottage cheese pancakes, also known as syrniki, perfect for a cozy breakfast.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons butter for frying

Instructions

  1. In a large bowl, mix together the cottage cheese, eggs, flour, sugar, vanilla extract, baking powder, and salt until well combined.
  2. Heat a non-stick skillet over medium heat and add butter.
  3. Once the butter is melted, scoop about 1/4 cup of the batter for each pancake and place it in the skillet.
  4. Cook until the bottom is golden brown, about 3-4 minutes, then flip and cook the other side for another 3-4 minutes.
  5. Remove from skillet and keep warm while cooking the remaining pancakes.
  6. Serve warm, topped with sour cream, jam, or fresh fruit.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Adjust the sweetness by adding more or less sugar according to your taste.
