  • 1 cup cranberry juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine cranberry juice, brown sugar, soy sauce, garlic, and ginger. Bring to a boil.
  3. Reduce heat and let simmer for 10 minutes.
  4. Mix cornstarch with water and add to the sauce, stirring continuously until thickened.
  5. Place chicken breasts in a baking dish and pour the cranberry sauce over them.
  6. Bake for 25-30 minutes or until chicken is fully cooked.
