Ingredients

  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 3 tablespoons cold water

Instructions

  1. Rinse the cranberries and place them in a saucepan with sugar and a cup of water.
  2. Bring to a boil, then simmer until the cranberries burst, about 10 minutes.
  3. Allow the mixture to cool, then blend until smooth.
  4. In a separate bowl, whip the heavy cream with vanilla until soft peaks form.
  5. Dissolve gelatin in cold water, then add to the cranberry puree.
  6. Fold the cranberry mixture into the whipped cream until combined.
  7. Pour into serving dishes and refrigerate until set, about 4 hours.
