A delicious take on a classic potato salad with a creamy dressing, fresh green beans, and the added flavor of turkey bacon.

Ingredients

  • 2 cups green beans, trimmed and cut
  • 4 medium potatoes, peeled and diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, then drain and cool.
  2. Blanch the green beans in boiling water for 3 minutes, then transfer to ice water.
  3. In a large bowl, mix sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.
  4. Add the cooled potatoes, green beans, and crumbled turkey bacon to the bowl and mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a lighter option, use Greek yogurt instead of sour cream.
  • Feel free to add other vegetables like bell peppers or celery for extra crunch.
