This Easy Chicken Burrito Casserole is a delicious dish that the whole family will love.

Ingredients

  • 2 cups cooked and shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups enchilada sauce
  • 3 cups tortilla chips, crushed
  • 2 cups shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, black beans, corn, taco seasoning, and enchilada sauce.
  3. In a baking dish, layer half of the crushed tortilla chips, followed by half of the chicken mixture, and a layer of cheese.
  4. Repeat the layers with the remaining ingredients.
  5. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
  6. Let it cool for a few minutes before serving.

Notes

  • For extra flavor, add jalapeños or hot sauce to the chicken mixture.
  • Serve with sour cream and guacamole on the side.
