  • 1/2 cup sugar
  • 1/2 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 8 ounces gingerbread cookies

Instructions

  1. In a bowl, combine the brewed coffee and sugar, stirring until the sugar dissolves.
  2. In another bowl, whisk together the mascarpone, heavy cream, vanilla extract, ginger, and cinnamon until smooth.
  3. Dip each gingerbread cookie into the coffee mixture and layer them in a serving dish.
  4. Spread a layer of the mascarpone mixture over the cookies.
  5. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
  6. Chill in the refrigerator for at least 4 hours before serving.
