1 cup pistachios, shelled
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 teaspoon rose water
1/4 teaspoon salt
1/4 cup finely chopped rose petals
Instructions
Soak the pistachios in water overnight. Drain and blend them with the milk until smooth.
In a saucepan, combine the cream, sugar, and salt. Heat until the sugar dissolves.
Remove from heat and stir in the pistachio mixture and rose water.
Chill the mixture in the refrigerator for at least 4 hours.
Churn in an ice cream maker according to manufacturer’s instructions.
Fold in the rose petals and freeze until solid.
Notes
For a more intense flavor, increase the amount of rose water.
Serve with additional chopped pistachios on top for garnish.
