- 2 cups grated carrots
- 1 cup whole wheat flour
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 3 large eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, mix the grated carrots, honey or maple syrup, and applesauce until well combined.
- Add the eggs and melted coconut oil, and mix until smooth.
- In another bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the walnuts if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool before serving.
Notes
- This cake can be served plain or with a healthy frosting made from Greek yogurt and honey.
- For an extra burst of flavor, add raisins or shredded coconut to the batter.
