  • 1 cup applesauce
  • 1 cup mixed dried fruit
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 3 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a large mixing bowl, combine the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, whisk together the applesauce, honey or maple syrup, and melted coconut oil.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the dried fruit and eggs until fully incorporated.
  6. Pour the batter into the bundt pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

  • This cake can be made a day in advance for better flavor.
