A delicious and easy Mediterranean Chicken Bowl perfect for weeknight dinners.

Ingredients

  • 2 cups cooked quinoa
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup red onion, diced

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced chicken and season with garlic powder, paprika, salt, and black pepper. Cook until golden brown.
  3. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, olives, and red onion.
  4. Add the cooked chicken to the salad and mix well.
  5. Serve in bowls and enjoy!

Notes

  • Can substitute quinoa with brown rice for a different flavor.
