- 2 cups vegetable broth
- 1 can chickpeas, rinsed and drained
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can diced tomatoes
- 2 cups spinach
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- In a large pot, heat a little oil over medium heat and add the onion, cooking until soft.
- Add the garlic, carrots, and celery, cooking for 5 minutes.
- Pour in the vegetable broth and add the chickpeas, diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Stir in the spinach until wilted before serving.
