A delicious and warming vegetarian stew perfect for cozy nights.

Ingredients

  • 2 cups vegetable broth
  • 1 can chickpeas, rinsed and drained
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 2 cups spinach
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, heat a little oil over medium heat and add the onion, cooking until soft.
  2. Add the garlic, carrots, and celery, cooking for 5 minutes.
  3. Pour in the vegetable broth and add the chickpeas, diced tomatoes, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25 minutes.
  5. Stir in the spinach until wilted before serving.

Notes

  • For added flavor, consider throwing in some bay leaves or chili flakes.
  • Serve with crusty bread for a fulfilling meal.
