- 3 pounds beef roast
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 2 carrots, chopped
- 2 cups beef broth
- Preheat the oven to 300°F (150°C).
- Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned.
- Place the roast in a large roasting pan. In a bowl, mix cranberry sauce, balsamic vinegar, garlic, salt, and pepper, then pour over the roast.
- Add chopped onion and carrots around the roast, then pour beef broth into the pan.
- Cover the pan tightly with foil and place it in the oven.
- Braise for 4 hours, or until the meat is tender and easily shredded with a fork.
- Remove from the oven, let it rest for 15 minutes, then slice and serve.
