A delicious and fulfilling slow-braised beef roast recipe featuring a tangy cranberry balsamic glaze.

  • 3 pounds beef roast
  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cups beef broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned.
  3. Place the roast in a large roasting pan. In a bowl, mix cranberry sauce, balsamic vinegar, garlic, salt, and pepper, then pour over the roast.
  4. Add chopped onion and carrots around the roast, then pour beef broth into the pan.
  5. Cover the pan tightly with foil and place it in the oven.
  6. Braise for 4 hours, or until the meat is tender and easily shredded with a fork.
  7. Remove from the oven, let it rest for 15 minutes, then slice and serve.

Notes

  • For added flavor, marinate the roast overnight with the glaze ingredients.
  • Serve with mashed potatoes for a complete meal.
